Carrot-Apple Casserole

Serving size: 3/4 cup
Ingredients
- 1 quart water
- 6 large carrots, peeled and sliced (6 cups)
- 4 large apples, peeled and sliced (6 cups)
- 5 tablespoons all-purpose white flour
- 2 tablespoons brown sugar
- 1/2 teaspoon ground nutmeg
- 1 tablespoon margarine, cut up
- 1/2 cup apple or pineapple juice
Preparation
Preheat oven to 350° F.
Bring water to boil in a medium-sized pot. Boil carrots for 5 minutes or until tender. Drain.
Layer carrots and apples in a large casserole dish.
Using a fork, mix flour, brown sugar and nutmeg in a small bowl.
Sprinkle flour mixture over carrots and apples.
Dot with margarine, then drizzle with juice.
Bake for 30 minutes or until apples are tender.

Helpful hints
- Casserole can be assembled ahead of time and refrigerated. Heat when ready to eat.
- Replace brown sugar with Splenda® no calorie sweetener, if desired. Carbohydrate is reduced to 19 grams per serving and 1 Carbohydrate Choice.
