Broccoli-Onion Latkes (Pancakes)

Serving size: 4 large latkes
Ingredients
- 3 broccoli crowns, washed and diced
- 1/2 cup onion, chopped
- 2 large eggs, beaten
- 2 tablespoons all-purpose white flour
- 1-2 tablespoons olive oil to pan-fry the latkes
Preparation
Boil the diced broccoli crowns in a small amount of water for 5 minutes; drain.
- In a medium bowl combine the eggs and flour; mix well.
- Add the broccoli and onion and stir into the flour/egg mixture until well mixed.
- Add olive oil to a frying pan and heat.
- Drop the mixture by spoonfuls into the hot oil, making 4 equal portions.
- Using a spatula, flatten the latkes and fry until brown on both sides.
- Drain on a paper towel to soak up extra oil.
- Serve hot.

Helpful hints
- The latkes taste best if eaten immediately.
- Potato latkes (pancakes) are traditionally served during Hanukkah. Broccoli-Onion Latkes are a good low-potassium alternative.
- Potato latkes contain over 600 mg potassium for a comparable serving unless the potatoes are soaked or boiled to reduce potassium.
