Santa Fe French Toast

Portions: 4     Serving size: 2 pieces (equal to 1 slice bread)

Ingredients

  • 4 slices white bread, 3/4" thick
  • 4 eggs or 1 cup egg substitute
  • 1-1/4 cup nondairy creamer
  • 2 tablespoons canola oil

Preparation

  1. Preheat oven to 400º F.
  2. Trim crust and cut bread in half diagonally.
  3. Beat egg slightly and add to nondairy creamer.
  4. Pour oil into a skillet and heat.
  5. Dip bread into egg mixture. Fry in oil until brown on both sides.
  6. Place browned toast pieces on a hot, baking sheet. Cook for 4 minutes in the oven to puff the toast.
  7. Remove from oven and drain on paper towel if needed. Serve immediately with powdered sugar, syrup or jelly.

It was delicious and easy to make. I used one egg & 3/4c. egg whites and added a little vanilla.

I added 1/2 tsp of Vanilla extract to the egg batter and sprinkled one side of the toast with cinnamon as it was cooking. Came out well.
