Cranberry Dip with Fresh Fruit

Portions: 24     Serving size: 2 tablespoons dip, 2 slices apple, 2 slices pear and 3 pineapple chunks

Ingredients

  • 8 ounces sour cream
  • 1/2 cup whole berry cranberry sauce
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 4 medium apples, cut into 12 slices each
  • 4 medium pears, sliced into 12 slices each
  • 4 cups fresh pineapple, cut into bite-size pieces
  • lemon juice

Preparation

  1. Place sour cream, cranberry sauce, nutmeg and ginger in a food processor and process until well mixed. Remove to a small bowl.
  2. Cut fresh fruit into bite-size pieces.
  3. Toss apple and pear slices with lemon juice to prevent browning.
  4. Arrange fruit on platter with dip bowl in the middle. Chill until ready to serve.

    Thank you for the recipes and advice.my sister has kidney problems and has coeliac disease. I try to find her gluten free and kidney friendly recipes.and pass them on to her.davita makes this possible. Thank you.

    Why would I want to make a recipe of 24 servings since I'm cooking only for m husband who is on dialysis, and me. Moderator comment: You might consider making a smaller batch. Consider making the whole batch to take to a holiday social event with more people.

    My husband is has ckd stage 4 and in his renal diet they tell him to not take in dairy or pears. Can you explain this? There seems to be many conflicts in information. Mrs. William Challans Moderator comment: Food lists identify foods high and low in potassium, phosphorus and sodium. What matters most is the total intake per day. You can use items from the limit list and still stay within the targets for these nutrients. Ask his dietitian for help with working in these items.

    I am under the impression that dialysis patients can't have dairy but I see that this recipe has sour cream. Moderator comment: The list does not include all dairy. Sour cream and cream cheese are low in potassium and phosphorus and these are allowed on a dialysis diet.

    What does this do to a type 2 diabetic with their blood sugar count? Moderator: If you follow the recommended portion the effect on blood sugar will be similar to eating a serving of fruit or starch. If you are using carb counting for controlling blood sugar, the 13 grams of carbohydrate in one serving counts as one Carbohydrate Choice.
