Barbecue Meatballs

Portions: 24 servings     Serving size: 2 meatballs

Ingredients

  • 3 poundsground beef
  • 2 large eggs, beaten
  • 1/2 cup skim milk or nondairy milk substitute
  • 1 cup dry oatmeal flakes (Quaker® Quick Oats)
  • 1/2 cuponions, diced
  • 1 tablespoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1 cup barbecue sauce (look for the brand lowest in sodium or make your own)

Preparation

  1. Preheat oven to 375° F.
  2. Combine all ingredients, except barbecue sauce and milk or milk substitute, in a large bowl and mix together.
  3. Roll into 1” balls and place on a baking sheet.
  4. Bake for 10 to 15 minutes, until meatballs are cooked through.
  5. Combine barbecue sauce and water in a warming dish or crock pot on low temperature setting. Add meatballs and stir. Cover until ready to serve.

Helpful hints

    • Instead of using commercial barbecue sauce, serve with Zesty Barbecue Sauce. Sodium content is much lower.
    • Make meatballs ahead and refrigerate. When ready to serve, heat ingredients together and transfer to a warming dish.

great recipe. the patients love them we use stubbs origional bbq sauce, and bought the premade or frozen meat balls so it was easy, and tasted great.

To thin most bbq sauces I use white vinagar and water with dried spices or powders garlic onion and the like this makes a good maronade for chicken, and beef in slowcooker normaly 1to 1 mix of the fluids and spices to bring back to taste. if you must have a thick sauce use arrowroot or corn starch

Patients thought these were a hit! However, the recipe does not say how much water to add to the BBQ sauce. I questimated and used 3/4c water to 1c store brand sauce and overall the taste was great! I used something called Cookies Western Style BBQ sauce and it had 160mg sodium for 2 TBSP serving.

Took this to a Super Bowl party, came home with an empty crock. The thyme and oregano made for a flavorful meatball. I used Sweet Baby Ray's . Going to try Zesty Barbecue Sauce next time.
